Let’s beat the batter

Preparing a good batter, whether it is thin or thick, means vigorous beating, whipping or whisking to blend the ingredients smooth and introduce air into the mixture. In general, batter is a mixture consisting of flour, a liquid, such as milk, water, or eggs (or substitutes), and other ingredients such as salt, sugar, and a backing powder.

The thickness or viscosity of batter varies between very ‘heavy’ or thick to liquid or thin. Batters may be sweet or savoury, and besides sugar or salt, flavourings like herbs, spices, etc. may be added as well.
